Wine in Transition

After the harvest has been picked and gone through its primary and secondary fermentation, it is now time to transfer the juice into oak barrels, stainless steel tanks or whatever vessel the winemaker chooses to complete the process of creating a wine. These oak barrels contain precious Pinot Noir that will rest and develop over the next 18 to 24 months on average. There is still quite a lot of work to be done before the wine is eventually ready to be bottled and shipped around the world. Until then, we enjoy the merits of previous vintages.
